Chicken, fruit & feta salad

You guys, this is one of my favorite simple salad recipes. My mom made a version of this for me a few years ago and I always think about how delicious and easy it is. These warm temperatures have me dreaming of fresh fruit and light, summery meals!


I use Tyson trimmed and ready chicken, season it with poultry seasoning and Trader Joe's every day seasoning. Grill for about 3 to four minutes on each side depending on the thickness of your chicken. 

I probably put more feta on the salad than I should, but I am addicted to cheese. I also mix romaine and spinach for the lettuce! 

Top with a Raspberry Vinaigrette and you will be in sweet, salad heaven!

Twelve minute English muffin recipe.

My mom has been making this recipe for as long as I can remember, and I love it!

Ingredients:

  • Craft singles
  • Bacon
  • Tomato
  • English muffins

It is such a fast and easy recipe, and tastes amazing as well, that is why I love it! I cook the bacon in the microwave because it is less messy and faster. To do that you put two paper towels on the bottom of a microwave safe plate, put the bacon on the paper towels, top with two more paper towels (do not overlap bacon), and cook for 4 to 6 minutes. Once the bacon is cooked, I use an electric skillet and place the bottom on the English muffin, bacon, tomato, then top with cheese before putting the top of the English muffin on again. I cook it on 250* for about 4 minutes on each side, or until the cheese is melted. Enjoy!

BBQ Chicken Pizza

One of my favorite types of pizza is a BBQ Chicken Pizza. We always make homemade dough because it is healthier, and much more delicious. I thought I would share with you our pizza recipe! DISCLOSURE: This works at a high altitude, and cannot be held responsible if it is terrible at sea level!

Honey Wheat Dough

  • 4 cups of unbleached flour
  • 1 cup of whole wheat flour
  • 1.5 tsp. of Bread Machine
  • 1.5 tsp. of salt
  • 2 Tbsp. olive oil
  • 2 Tbsp. honey
  • 2 cups of room temperature water
1. Mix all ingredients together in a stand mixer
2. Using dough hook for the mixer, mix dough on low for three minutes
3. After the three minutes, mix dough on medium for 2 more minutes
4. Put dough in a greased bowl and let it sit at room temperature uncovered for 30 minutes
5. Cover and refrigerate for 24 hours before serving

We cut before so we can portion for kid pizzas (which they make!)

BBQ Chicken Pizza
  • Large bag of "pizza" cheese
  • Block of Gouda cheese
  • Frozen, pre-cooked chicken pieces (warm and soak in BBQ sauce for 20 minutes prior)
  • Dinosaur BBQ sauce (or any BBQ sauce you love)
  • Onion
  • Cilantro
1. Preheat oven to 500* and add pizza stone
2. Kneed dough with flour on tin foil for easy transport to the pizza stone
3. Spread BBQ sauce over dough
4. Add pizza cheese 
5. Lightly sprinkle gouda cheese over the top
6. Add desired amount of chicken pieces 
7. Add onions and cilantro to taste
8. Place on pizza stone with tin foil, cook for 8 - 10 minutes, 12 if you like your pizza crispy

Buffalo Chicken Dip

I am going to share my sister-in-laws famous Buffalo Chicken dip recipe! I think her friend (Nick) coined this recipe, but it is amazing! And, with the upcoming college football season about to start, what better time? (Go BUFFS!)


Ingredients:
Chicken Breasts (3-5)
8 oz. package of cream cheese
2 cups of Pepper Jack cheese
Franks Red Hot
Ranch

Directions:
Preheat oven to 350*
Boil the chicken until cooked (about 25 minutes)
Shred chicken with a fork
Layer the bottom of pan with the cream cheese
Add all of the shredded chicken
Add all of the Pepper Jack Cheese
In a separate bowl start with one cup of Ranch and add the desired amount of Frank's Red Hot Sauce… if you want the dip more spicy, add more sauce! The more watery you want your dip, the more of this sauce mixture you will want to use! 

Poor mixture over top of already added ingredients in the pan, and bake for 30 minutes at 350*. When it is finished baking, remove from oven and stir or put in another bowl. 

Bake at 350* for 30 minutes.

What's for dinner tonight?!

Tonight my dad is coming over to do Aiden's chair rail in his room! Nothing like having a friend come in from out of town motivate you to get stuff done!

So, I am making orange chicken in the crock pot, which will probably make him sick, because everything does! But.... I found the recipe here...
